Local, seasonal and superb
Almost everyone who heard the plan for the Root told chef James Rigato it woulnd’t work, he recalls. “They said, ‘Local, seasonal, small menu, kind of fine dining, White Lake – you’re nuts. No one’s out there.'”
It was even riskier than that: The restaurant would be in a suburban retail strip anchored by a JCPenney. Rigato, 27, had never been an executive chef, and owner Ed Mamou, his boss, had never had a restaurant.
